Simple Summer Salad

Light summer farmfare!

Nothing beats a garden fresh summer salad when it comes to eating light!  From the crispy, wattery, sweet crunch of just-picked sugar snap peas to the visual appeal of all the colors, garden salads provide super-fast satisfaction.  For this very simple version, we topped local greens with some of own young carrots, and radishes, cukes and large cherry tomatoes from the local farmers' market.  Helpless when it comes to olives, we also enjoyed a few luscious, buttery castelvetrano olives!

I would have added scallions and herbs had my brain been working.

You don't need much space to grow carrots/  This bed is 30" wides by barely 7' long.  I pushed its limit in sowing three rows, and was not diligent in thinning, but a good depth of loamy, humus-rich soil helped balance out the overload.  Yesterday's first harvest yielded just over 2lbs of 3-4" roots!
